I keep the beans in the freezer, also put in the can of commercial ground coffee once it is opened. I also have a jar of instant in there for the recipes that call for it. I grind beans directly from the freezer and put directly from the grinder into the pot! They lose flavor very rapidly. I would freeze them whole, then grind what I needed and brew them. I heard it kept them fresh longer also. It seemed to be true. It certainly didn't hurt them. Directly from freezer to grinder is fine, but once they warm up from grinding, they can clump, so I do suggest leaving them sit out for a half an hour or so.
