Cold water is not stale from sitting in the hot water tank for days on end - it also has picked up less minerals from sitting in the pipes - giving a tastier brew and less cleaning later on.

Noah’s right. Also, hot water has less oxygen in it than cold water, which affects the flavor of the coffee (or tea). That’s the primary reason you start with cold water.
