I don't go to specialty coffee shops (do it at home) but, if they do it the right way, iced coffee shouldn't be made with regular coffee chilled, but with cold brewed coffee.

Good iced coffee is made by steeping the grounds in a special container over hours in a refrigerator. It makes a less acidic coffee and since it takes more time to make would cost more.

It can be made with hot coffee cooled, but that would require even more work, otherwise it would go stale by the time it cooled slowly & it will taste different.
